Τα τελευταία χρόνια, πολυάριθμες μελέτες έχουν αξιολογήσει τα ζωντανά στελέχη του Saccharomyces cerevisiae σαν «προβιοτικά», ενώ παράλληλα είναι πολύτιμα φυσικά διατροφικά συμπληρώματα (Vohra et al. 2016).
Ο S. cerevisiae δεν είναι «φυσικός ξενιστής» στον γαστρεντερικό σωλήνα των πτηνών και διέρχεται ζωντανός και ενεργός χωρίς να προσκολλάται στα τοιχώματά του, έχοντας υψηλή αντοχή στην οξύτητα και στα χολικά άλατα του πεπτικού συστήματος.
Η αποτελεσματικότητά του, βασίζεται σε μια πληθώρα δυνητικών μηχανισμών όπως είναι η βελτίωση της μορφολογικής δομής του εντέρου, η μείωση του pH και η σταθερότητά του, η αύξηση των ενζύμων του πεπτικού συστήματος, η βελτίωση της πεπτικότητας της τροφής, η μείωση του άγχους των ζώων, η διέγερση του ανοσοποιητικού συστήματος και η αύξηση του τίτλου αντισωμάτων κατά των ιών, η καταπολέμηση των μυκοτοξινών και άλλων βακτηριακών τοξινών, η ενίσχυση των ωφέλιμων μικροοργανισμών στο έντερο, η αναστολή της προσκόλλησης παθογόνων μικροβίων στο κυτταρικό τοίχωμα του εντερικού βλεννογόνου και η άμεση εξαλειπτική επίδραση σε παθογόνα εντεροβακτήρια, πρωτόζωα και άλλους ζυμομύκητες (εξαλειπτικός ανταγωνισμός).
Από βιοϊατρική σκοπιά, αυτοί οι μηχανισμοί μπορούν να ταξινομηθούν ως φαρμακοδυναμικοί και φαρμακοκινητικοί και μπορεί να λειτουργήσουν ως εναλλακτική λύση στα αντιβιοτικά και στον έλεγχο παθογόνων μικροβίων στο έντερο των πτηνών (Parlat et al. 2001, Holzapfel and Schillinger 2002, Patterson and Burkholder 2003, Baptista et al. 2005, Perez 2007, Siragusa and Ricke 2012, Ahiwe et al. 2019).

Βελτιώνει την πέψη και την υγιεινή κατάσταση, προκαλώντας αύξηση των ωφέλιμων λακτοβάκιλλων και μείωση του πολλαπλασιασμού βλαβερών βακτηρίων (Escherichia Coli, Staphylococcus aureus κ.ά.) και πρωτόζωων (κοκκίδια) στο έντερο των πτηνών.
